Steps
- 01Blend 1 cup cooked white beans with a big handful of wilted spinach.
- 02Add 1 chopped ripe tomato and 2 tsp olive oil; blend until silky.
- 03Loosen with water to a thick, spoonable purée.
- 04Freeze in an ice-cube tray; transfer frozen cubes to a freezer bag.
- 05Reheat 1–2 cubes to steaming, stir well, and cool to body temperature.
Why it works
Beans and spinach stack two plant-iron sources, tomato's vitamin C helps the iron absorb, and olive oil adds calories — a green sauce that also coats pasta later on.
Storage
Freezer cubes keep 2 months; thawed cubes keep 24 hours in the fridge — never refreeze.
